Sour Cream and Dill Potato Salad

Sour Cream and Dill Potato Salad
Ingredients
2 pounds small red potatoes, scrubbed
4 eggs(whites only), hard-cooked and diced
3 ribs celery, diced
3 green onions, thinly sliced
2 Tbls. diced dill pickle
3/4 c. mayonnaise
1/4 c. sour cream
1 tsp. Dijon mustard
2 tsp. dried dill
2 tsp. diced dill pickles

    Preparation:
    Cut the potatoes into bite-size chunks and place in a saucepan. Cover with water and boil for about 10 to 12 minutes, until just tender. * poke with a fork and it\’ll fall off.  Pour off water, set the pan in a sink or larger pan of cold water to cool the potatoes quickly. In a large bowl, combine the potatoes with eggs, celery  green onions, and diced dill pickle. In another bowl, combine the sour cream, mayo, and Dijon mustard. Add to the potatoes and stir gently to combine. Fold in the dill and add salt and pepper to taste.

    Coral Crush

    Morning Beauties! I don\’t know about where you are, but here the weather is a hot mess. Muggy and rainy it is feeling more like mother nature just wants to skip right over spring. While mother nature might not want to embrace spring I am embracing the gorgeous colors, flowers and trends that spring is offering. My current springy color crush is coral. Anyone can wear coral whether it be deep or pastel – it looks gorgeous paired with any complexion.

    Easter Sunday

     Good Morning Dolls! Hope you had a fabulous Easter. I figured I would share some pictures from my Easter get together with you. Hope you enjoy!

    Easter Dresses

    Easter is on Sunday and I have yet to come up with an outfit to wear! I am thinking the second dress would be perfect. What do you think? What will you be wearing for Easter?

    Jalapeno Poppers

    Bacon Wrapped Jalapeno Poppers
    Ingredients:

    Fresh Jalapenos, 2-3 Inches In Size
    Cream Cheese, softened (I used fat free)
    Bacon (I used Turkey Bacon), Sliced Into Thirds

    Directions:
    1. Cut jalapenos in half, length-wise. I would recommend wearing gloves with chopping and scrapping – if you touch your eyes you\’ll definitely be having a bad day. With a spoon, remove the seeds and white membrane. Smear softened cream cheese into each jalapeno half. Wrap jalapeno with bacon pieces (1/3 slice).  Secure by sticking toothpick through the middle.
    2. Bake on a pan covered in foil at 375 degrees for 20-25 minutes.  Serve immediately, or they\’re great at room temperature.
