Skinny Cherry Chocolate Cupcakes

“Skinny” cupcakes are my go to whenever I have people over. Not only are they delicious, but also you cannot tell they are a skinny version. I previously made these funfetti ones, but a few friends have asked me about a skinny chocolate version so I figured I would share these delicious skinny cherry chocolate cupcakes. For those on weight watchers they are only 3+ points!

Skinny Cherry Chocolate Cupcakes
Ingredients

Cupcakes:
1 box devils food cake mix
1 (12 oz) can diet cherry coke (or 1.5 cups of pop)

Frosting:
1 (8oz) container cool whip
1 sugar free chocolate pudding mix
1 cup skim milk

Directions
1. Preheat oven to 350 and line muffin tins with cupcakes liners for 24 cupcakes.
2. Pour cake mix into the bowl of a mixer. If using anything other than a 12 oz can, measure out 1.5 cups of pop and add to cake mix
3. Beat cake mix and pop together until batter is smooth, creamy and thick about three minutes.
4. Pour cake mix into lined muffin tin, filling about ¾ way full. Place cupcakes in the preheated oven for 18-20 minutes or until a tooth pick inserted in the center comes out clean.
5. While cupcakes are baking, mix together pudding and milk with a whisk until thick. The gently fold in the cool whip, until everything is combined. Frosting will be light and fluffy. Store in the frig until ready to frost cupcakes.
7. When cupcakes come out of the oven allow to cool completely before frosted. You can also add some frosting to the center of the cupcake.

Since I receive a ton of questions and comments about Jack’s wardrobe I thought it was only appropriate to talk about his winter wear. Jack joined my family in November, and since frigid temperatures and a one-pound puppy do not mix well a jacket became a necessity. When temps dipped lower I decided on buying him a couple sweaters and from there Jack’s winter wardrobe just began to increase.
