I love my mum\’s lemon bars, but I hate the amount of calories and Weight Watchers Points that come along with them. So while I have been home my mum and I revamped her traditional lemon bars into ones you don\’t have to feel bad about eating. Of course I had to share the recipe with you!

• Lemon topping: beat eggs in a medium bowl until well blended. Add vanilla and powdered sugar; mixing until the powdered sugar is completely dissolved. Then add the lemon zest. .
• As soon as the crust is finished, remove it from the oven and reduce the oven temperature to 300 degrees, and immediately pour lemon mixture over the hot crust.
• Bake for about 30 minutes allow to cool. You\’ll want to keep this in the refrigerator.
Yields: 24 bars at 3 weight watchers + pts.
For my February friendship gift I decided that I did not want to go with a predictable Valentine\’s theme idea. However I knew you really couldn\’t get through February without a little chocolate. So I searched through a recipe book my mum made when I was in elementary school and I came across these delicious \”turtles\”. I placed between five and seven turtles in a clear bag and tied with with a pink ribbon. These are only three ingredients and so simple, you\’ll want to make some for yourself this weekend.
You will need
• a bag of pretzel rings
• whole pecan slices
• a bag of Rolo\’s (a bag of Rolo\’s will make 56 turtles)
Bake in a 325 degree preheated oven for two minutes.
Place in the freezer for 10-15 minutes to allow chocolate to firm up.
