Zucchini Pancakes

At the end of summer my mums garden tends to be taken over by zucchini. Since you can only make so many loaves of zucchini bread. I switch it up with zucchini pancakes, they are the perfect addition to any meal or great when eaten alone.
Zucchini PancakesIngredients2 eggs; beaten
1/3 cup Bisquick
¼ cup parmesan cheese (green can)
2 cups zucchini (shredded)
Directions
1. Beat the eggs, Bisquick and cheese together. Add the zucchini just before you are ready to fry (otherwise your mixture will become watery).
2. Spray a frying pan with cooking spray and drop the zucchini mixture by the spoonful. Be sure to flatten it out a bit.
3. Cook over medium heat for 8-10 minutes.
Serve with butter, salt and pepper or plain.

YUM! I have been craving zucchini bread but this seems like a better alternative.

Those look really good. At first I thought they would be sweet like zucchini bread, but since they are savory they would be great with so many things or on their own as an appetizer.

Mmmmmm….I need to see if I still have those couple of zucchinis in my produce drawer. If so, these will be made lickety split 🙂
