Zucchini Pancakes

At the end of summer my mums garden tends to be taken over by zucchini. Since you can only make so many loaves of zucchini bread. I switch it up with zucchini pancakes, they are the perfect addition to any meal or great when eaten alone.   
Zucchini Pancakes
Ingredients
2 eggs; beaten
1/3 cup Bisquick
¼ cup parmesan cheese (green can)
2 cups zucchini (shredded)

Directions
1. Beat the eggs, Bisquick and cheese together. Add the zucchini just before you are ready to fry (otherwise your mixture will become watery).
2. Spray a frying pan with cooking spray and drop the zucchini mixture by the spoonful. Be sure to flatten it out a bit.
3. Cook over medium heat for 8-10 minutes.
Serve with butter, salt and pepper or plain.

  1. Those look really good. At first I thought they would be sweet like zucchini bread, but since they are savory they would be great with so many things or on their own as an appetizer.
