Last night one of my friends from college and I were discussing candles and our favorite scents. In college her and I both had signature scents for our dorm rooms. Mine was Bath & Body Works Black Raspberry Vanilla while hers was Frosted Cupcake. Her and I may be past the point of spraying our rooms with our signature scents, but we aren\’t past giving our rooms a delightful scent. Some of my go to candle scents are below. Summer is winding down and the days are getting shorter. However there is still time to make a summer favorite treat…. the ice cream sandwich! I made these delicious ice cream sandwiches while my parents were in town and they were a huge hit. My mum said that they taste like ice cream in between a brownie. If you love ice cream sandwiches definitely give this simple recipe a try!
Homemade Ice Cream Sandwiches
Ingredients
• 1/2 c. (1 stick) unsalted butter, melted. You will need more for your pan
• 1/2 c. sugar
• 1 large egg
• 1.5 tsp. vanilla
• 1/2 tsp. salt
• 1/2 c. flour
• 1 large egg
• 1/4 c. unsweetened cocoa powder
• 1.75 quarts ice cream (any flavor), softened
Directions
• Preheat oven to 350. Butter a 15 x10 inch jelly-roll pan and line it with parchment paper. * note: be sure to leave an overhang on the short sides.
• In a bowl, whisk together butter and sugar until well combined; whisk in your egg, vanilla and salt.
• Add flour and cocoa powder mix until smooth.
• Spread mixture in your prepared baking pan (you`ll want a spatula for this part!). Bake until edges begin to pull away from the sides 8-10 minutes. Allow to cool completely in pan.
• Using the paper overhang, lift cake onto a work surface. With a serrated knife, cut in half crosswise. Place one half of cake, flat side down on a large piece of saran wrap. Spread with softened ice cream and top with remaining cake flat side up.
• Return to baking pan and freeze until firm.
• Once frozen use a serrated knife and cut into 8 rectangles. Wipe the blade in between each cut. Serve immediate or wrap in Saran Wrap or parchment paper and store up to two weeks.
