Insane Inflatable 5k

 

Summer is winding down, and I’ve been working towards making every day of it count. So when August 1st rolled around my best friend and I met up in Lansing for the Insane Inflatable 5k and let me tell you it was not what we expected.
A 5k that features multiple bounce house like obstacles sounds like a dream come true, and while it was a ton of fun – man do those things take a lot of your energy. If you want a challenging 5k I highly recommend checking out the Insane Inflatable 5k.

Single Girl Habits You Shouldn\’t Give Up

A budding relationship is no excuse to abandon single-girl habits that make you happy, keep you san and make you well you.

1. Chopping your hair: Sure your man will probably miss your long tresses, but the thing about hair…. it grows back.

2.  Girly it Up: Your place is YOUR place. Don’t worry about taking your pink, animal print or girlyness down a notch when you have a guy over. My bathroom is as girly as girly gets and no one has complained about it or ever insisted on not using it.
3. TV Shows: Save those for you and your girlfriends, just as you did before.

4. Waiting Around. Not going out on a girls night because he might try and make plans with you is unnecessary. You shouldn’t wait around for a boy when you can be hanging with the girls.

5. Taking the Lead. It’s tempting to lean on a man to make decisions – and so he should, when it comes to where he wants to take you to dinner. But you were capable of buying a bed without his opinion and you still are.

Vegan Chocolate Chip Cookies

Over the weekend I was invited to a BBQ and asked if I could bring dessert. It posed the perfect opportunity for me to try a recipe for vegan cookies. The recipe is super versatile you can use it as a base for a range of different cookies (chocolate chip, snickerdoodle….etc).  Also I didn’t tell anyone they were vegan and they chowed them.
Vegan Chocolate Chip Cookies
Makes 18
Ingredients:
2 cups flour
1 tsp. baking powder
1 tsp baking soda
dash of salt
1 cup chocolate chips (I bought Enjoy Life ones)
½ cup sugar
½ cup brown sugar packed
½ cup + 1 tablespoon oil (I used canola)
¼ cup + 1 tablespoon water

Directions:
1. In a large bowl, whisk together flour, baking powder + soda and salt.
2. Add the chocolate chips and toss to coat.
3. In a separate large bowl blend sugars with oil and water until smooth (3 minutes).
4. Add the flour mixer to the sugar mixture and stir to combine.

5. Cover with plastic wrap and refrigerate for at least 12 hours or up to 24 hours.
6. Remove from the refrigerator and scoop onto a cookie sheet.
7. Freeze each cookie sheet of balls for 10 minutes before baking.
8. Bake at 350 for 12 minutes or until golden.

9. Cool before serving and enjoy.
