Kroger Prep + Pared: Jerk Chicken

 

Life gets busy, and that’s why meal-kit companies such as Hello Fresh are becoming the new way to eat. I have considered them before, but between the price and worry of freshness I never jumped onto the bandwagon. If you have been following me this year you know that Kroger released Prep + Pared Meal Kits and I am totally obsessed. You can check out previous meals here, here, and here. Andrew and I have been extremely busy lately, and last weekend we turned to a Kroger Prep + Pared Meal Kit for dinner. We picked the Jerk Chicken, oh my goodness YUM! This might be my favorite meal yet, and I am pretty sure A agrees. While the kit told us to roast the chicken we were dealing with a warm day, and instead decided to grill the chicken on the barbecue – the result was perfection. The heat of the spicy jerk chicken paired perfectly with the cooling sweet mango salsa. Kroger has their own twist on the popular Caribbean dish of callaloo (a stewed leafy green) when they paired kale, onions and crushed red pepper together. We spiced up the kale a little too much for me to handle – so be careful when added the crushed red pepper! Definitely recommend giving this kit a try!
