Vegan Chocolate Chip Cookies

Over the weekend I was invited to a BBQ and asked if I could bring dessert. It posed the perfect opportunity for me to try a recipe for vegan cookies. The recipe is super versatile you can use it as a base for a range of different cookies (chocolate chip, snickerdoodle….etc). Also I didn’t tell anyone they were vegan and they chowed them.
Vegan Chocolate Chip Cookies
Makes 18
Ingredients:
2 cups flour
1 tsp. baking powder
1 tsp baking soda
dash of salt
1 cup chocolate chips (I bought Enjoy Life ones)
½ cup sugar
½ cup brown sugar packed
½ cup + 1 tablespoon oil (I used canola)
¼ cup + 1 tablespoon water
Directions:
1. In a large bowl, whisk together flour, baking powder + soda and salt.
2. Add the chocolate chips and toss to coat.
3. In a separate large bowl blend sugars with oil and water until smooth (3 minutes).
4. Add the flour mixer to the sugar mixture and stir to combine.
5. Cover with plastic wrap and refrigerate for at least 12 hours or up to 24 hours.
6. Remove from the refrigerator and scoop onto a cookie sheet.
7. Freeze each cookie sheet of balls for 10 minutes before baking.
8. Bake at 350 for 12 minutes or until golden.
9. Cool before serving and enjoy.
