My Skinny Funfetti Cupcakes were such a hit I just had to share with you my recipe for Skinny Brownies. The recipe is super simple – mix one can (12 ounces) of Diet Pepsi with one box of brownies and bake at 325 for 20-30 minutes or until a toothpick inserted in the middle comes out clean. *note: I do not drink pop – I only use it in recipes. Therefore instead of buying a case and having cans I just buy a 20 oz. bottle at the grocery store and measure out 12 ounces. *
Yum I never thought of doing that with brownies! I love making diet cupcakes, or as my Eagle Scout boyfriend likes to call it \”dump cake\”. Apparently because when camping you just \”dump\” the cake mix and soda into a dutch oven and cook. Still sounds gross. Haha

For someone who has been cooking for a long time (okay,so I thirty-five), I am always amazed that a bottle of Pepsi and cake mix can really work-makes me wonder if eggs and oil really do anything but \”fluff\” the cake and make my bootie larger :))

I've done this before and loved it! You can also make cake mixes with 7 Up that turn out pretty good too.

Add a teeny sploush of mint essence… delicious… pepsi + mint it's really great during summer-just have to do like you make a mojito, but don't put alcool use diet pepsi… mmm
