Skinny Funfetti Cupcakes

I am a huge fan of cupcakes and if I am going to make a healthier version I want them to taste like the real thing and these definitely do. These cupcakes only take two ingredients, and honestly you will not believe how moist and rich they taste.

{use a mixer to beat out the lumps}

{I used a 1/3 measuring cup to fill the cupcake liners}
{I love the taste of these without frosting}
Skinny Funfetti Cupcakes
Ingredients
1 box Duncan Hines Confetti Cake
you can use any cake brand I just think Duncan Hines and the diet pop taste best
1 (12 oz.) can diet cherry 7-up (or any diet pop of your choice)
For light cakes use a light colored diet pop
For darker ones such as chocolate use a darker diet pop ex. diet dr. pepper
Directions
• Pre-heat oven to 350 degrees, and line (2 (12 count) muffin tins) with cupcake liners.
• If you are using anything other then a 12 oz. can measure out 1.5 cups of pop.
• Beat cake mix and pop together until smooth and creamy.
• Pour cake mix into lined muffin tin, filling each with 1/3 cup of batter.
• Place the cupcakes in the oven and bake 18-24 minutes; or until a toothpick in the center comes out clean.

• NOTE: If you have questions and would like me to respond you need to leave your email address. I cannot respond to an anonymous comment. Thanks :]

{with skinny frosting}

  4. I didn't think you could cook with the diet soda because of the aspartane, but I could be wrong. Those sound so wonderful. I may have to try devil's food made with a cherry coke.

  8. Does it have to be Duncan Hines cake mix or can you use another brand? Also, will diet coke turn the cupcakes a dark color?
