Skinny Funfetti Cupcakes

I am a huge fan of cupcakes and if I am going to make a healthier version I want them to taste like the real thing and these definitely do. These cupcakes only take two ingredients, and honestly you will not believe how moist and rich they taste.
{use a mixer to beat out the lumps}
{I used a 1/3 measuring cup to fill the cupcake liners}
{I love the taste of these without frosting}
Skinny Funfetti Cupcakes
Ingredients
1 box Duncan Hines Confetti Cake
you can use any cake brand I just think Duncan Hines and the diet pop taste best
1 (12 oz.) can diet cherry 7-up (or any diet pop of your choice)
For light cakes use a light colored diet pop
For darker ones such as chocolate use a darker diet pop ex. diet dr. pepper
Directions
• Pre-heat oven to 350 degrees, and line (2 (12 count) muffin tins) with cupcake liners.
• If you are using anything other then a 12 oz. can measure out 1.5 cups of pop.
• Beat cake mix and pop together until smooth and creamy.
• Pour cake mix into lined muffin tin, filling each with 1/3 cup of batter.
• Place the cupcakes in the oven and bake 18-24 minutes; or until a toothpick in the center comes out clean.

Whipped Frosting
Ingredients
• 1 (8 oz) Container Cool Whip
• 1 (8 oz) or use 4 oz. Sugar Free Vanilla Pudding Mix
• Food coloring if desired
Directions
• Whisk the Cool Whip and Sugar Free Vanilla Pudding together (and food coloring if desired) until the ingredients are combined. Be careful you don\’t over mix.
• Chill whipped topping until you are ready to frost the cupcakes.
1.5 points per plain cupcake

My mom used to make funfetti cake for my birthday every year. My birthday is in a week and I shall be making these since the madre is 1,000 miles away. SO excited!

I didn't think you could cook with the diet soda because of the aspartane, but I could be wrong. Those sound so wonderful. I may have to try devil's food made with a cherry coke.

I've done this with diet cream soda, and it is awesome! I will DEFINITELY try this out. I loveee diet cherry 7up! Do these taste like cherry at all?

I will have to try this one… I have done the chocolate cake mix with Coke Zero and also the Cinnamon Strucel with diet root beer… My kids love the chocolate with diet coke or coke zero.

Does it have to be Duncan Hines cake mix or can you use another brand? Also, will diet coke turn the cupcakes a dark color?
