Blueberry Oatmeal Cookies
Ingredients
3/4 cup firmly packed brown sugar
3/4 cup vegetable shortening
1/2 cup granulated sugar
1 egg
1/4 cup water
1 teaspoon vanilla
3 cups Old Fashioned Quaker Oats
1 cup all-purpose flour
1 teaspoon salt (optional)
1/2 teaspoon baking soda
1 cup blueberries
Directions
1. Heat oven to 375°F.
2. In large bowl, beat brown sugar, shortening and granulated sugar on medium speed of electric mixer until creamy. Add egg, water and vanilla; beat well. Add combined oats, flour, salt and baking soda; mix well. Smash blueberries in bowl and mix in.
3. Drop dough by rounded teaspoonfuls onto ungreased cookie sheets.
4. Bake 9 to 11 minutes or until edges are golden brown. Remove to wire rack. Cool completely. Store tightly covered.
