Cranberry Orange Bread

It\’s that time of year again where fresh cranberries can be found everywhere. Nanny (my great grandma on my dad\’s side of the family) use to make Cranberry Orange bread every year during the holidays. The bread is completely addicting and too good not to share! It also makes a wonderful gift for neighbors and friends.

Cranberry Orange Bread

Ingredients

• 2 cups flour
• 1 cup sugar
• 1 1/2 teaspoons baking powder
• 1 teaspoon salt
• 1/2 teaspoon baking soda
• 1/4 cup butter
• 1 egg
• The zest of one orange
• 3/4 cup orange juice
• 1 cup cranberries
• 1/2 cup nuts (optional)

Directions
• Preheat oven to 325 degrees. Grease a 9×5 inch loaf pan.

• Beat the egg, butter, sugar and juice together. Mix all dry ingredients and add to mixture; beat until well combined. Stir in cranberries by hand (add nuts if desired).
• Pour into loaf pan and bake 35-45 minutes or until a toothpick inserted in the center comes out clean. Allow to cool on a cooling rack before removing from the pan.

I had a perfect dozen but when i set them to cool, my darling roommate awoke from a nap and thought i was recipe testing. The text \”the cookies came out great\” resulted in a dramatic and slow motion of me running into the kitchen screaming Nooooooo as she finished her 2nd cookie. So im sending 10 cookies… plus something awesome. 🙂 and my roommate sends her sincerest apologies LOL

  5. I picked a good day to stop by. That looks fabulous. I'm sorry I have been away for so long. You would not believe how busy I've been. The semester is coming to an end and I've been swamped with schoolwork. I am going to find time to make this bread though.
